Heirloom Tomato Bruschetta

What a great family weekend we had.  With the kids out of school and the hubby home, we wanted to end the long holiday weekend with a simple meal for the two of us to enjoy after feeding the kids dinner. We do this often, as both my hubby and I truly believe in “our time”.  Family is the number one important thing to us and our kids come first, however making time each night for us is just as important and most likely the key to our successful 15 years of marriage. 🙂 We can’t always head out for “date night” but we can keep “date night” at home and that is very budget friendly.

One of our fav easy to do dishes…..Bruschetta (we pronounce it Bru-sket-ta) some pronounce is (bru-shetta) either way it is very simple and so great homemade.


Heirloom tomatoes – diced small
Garlic cloves – processed in machine
Fresh Basil – chopped
Kosher Salt
Pepper flakes
Mix everything in a bowl let sit for about 1 hour.
Baguette sliced 1/2 thick
Drizzle with olive oil and sprinkled with Kosher Salt
Bake at 350 degree (pre-heated) oven for about 8 minutes or until brown around the edges

The mixture makes for a great left-over the next day just add some fresh pasta and you have another meal…..:)
