Gorgonzola Risotto

Can we talk Risotto? Seriously, no joke one of my most FAV foods to get creative with.  This stuff is ohhhh so good, but ohhhhhh so bad on the waistline if I am not watching it.  I we have {my hubby and I} created so many different risotto recipes in the kitchen.  They are never-ending because you can do just about anything with it.
What did we have in the house this time?  Plenty of cool choices because we are always shopping smart and “fresh” so we can have ingredients handy at most any given moment.
  • EVOO  
  • Onion diced
  • Garlic
  • Chicken Broth {low sodium OR organic}
  • Sliced Onion
  • Sliced Apples
  • Crumbled Gorgonzola
  • Baby Arugula
  • Kosher Salt
  • Course Ground Pepper

So you either have a “love” or “hate” relationship with risotto.  This is because it takes time and patience to make it {good and correct}.  With that said, I would still rather cook a million pots of risotto over baking ANY day!
Place your SLICED onion and SLICED apples in a medium-heated skillet and cook slowly until golden brown {about 15-20 mins}
In another pan/skillet add EVOO and DICED onions and garlic {saute until tender}.  Stir in the risotto and heat for about 2 mins, then SLOWLY add your chicken broth/stock A CUP AT A TIME until all broth is gone.
Salt and pepper to taste after the risotto is cooked {tender}, stir in crumbled Gorgonzola and top with the caramelized apples and onions {add that special touch} and garnish with your baby arugula.  This is a treat meal, so go ahead and enjoy a good glass of wine with it.  Your workout will be waiting for you tomorrow ♥
