Cilantro Verde Pesto Grilled Chicken

How many ways can we make chicken?  Who knows, I have lost count.  But here is an original recipe created the other night using what we had in the house.  Remember, it is all about being prepared, having the right foods on hand and shopping clean and healthy.  Doing this will enable you to make simple dinners at home for you and even your family.  I can’t stress enough how affordable it really is to prep and cook your own meals at home, instead of picking up or taking out, or even buying pre-packaged food.

It just needs to become a priority and once it is, then it is actually simple and can be fun.

  • Use a day off to take time to spend at the market {instead of trying to go after work}
  • Take a list
  • Use the outer aisles in the market as that is where you find the fresh foods
  • Have fun with spices and stock the cupboard with some
  • Take advantage of “specials” and buy extra
  • Freeze anything you can for future use
  • Clean and cut any chicken or veggies and have them in containers ready to go
  • Menu plan if that is what you like to do
  • Keep the staples in the house all the time {proteins for sure}
  • Have fun in the kitchen, don’t make it a chore
  • Pick up some candles and light them while cooking {I love doing this, I always have candles in my kitchen}
  • Don’t be afraid to try something new, get creative

Recipe…Cilantro Verde Pesto with Grilled Chicken {fitnessmomwinecountry}


  • Fresh Garlic
  • Yellow Onion
  • Red Onion
  • Lime
  • Cilantro
  • EVOO
  • Chicken Breasts
  • Brown Rice
  • Low Sodium Chicken Broth
  • Fresh Green Beans
  • Sea Salt
  • Garlic Powder
  • Rice Vinegar

Grill your chicken breast and season with garlic powder and dash of sea salt and EVOO.  Set aside when done.  Steam brown rice using low sodium chicken broth {water is fine if you don’t have}.  Clean green beans and break of ends, then par-boil in a pan of water for about 5 mins. {keeping them still al dente} remove the beans from the hot water and drain in colander.  *Make sure to wipe the pan totally dry* as you will add EVOO and fresh garlic to it.  Make sure your garlic is crushed.  Add the beans back to the garlic pan and let sit, making sure to blend all the beans and garlic together.  Take lime and grate the essence over the top of the beans.  Cut lime in half and squeeze the juice from it onto the beans.

Cilantro Verde Pesto

Add EVOO , yellow onion, garlic, cilantro, lime juice, 1/4 cup rice vinegar.  Add all these ingredients into a blender and blend.  Chop red onion and add AFTER all is blended to have “pieces” of onion in the pesto.  Place into a bowl and set aside.


Serve everything onto plate and top the chicken with the Cilantro Pesto.  Enjoy
