Broccoli Egg Scramble

We eat quiche right?  Normally quiche has broccoli in it {well mine does}.  Today’s recipe is a super quick and very healthy breakfast, post workout and without having to bake a quiche or use a crust.


  • Fresh broccoli {if you have frozen it will do}
  • Mushrooms
  • Yellow Onion
  • Eggs
  • Cheese {I used an assorted mix}
  • Sea Salt
  • Ground Pepper
  • Avocado
  • EVOO
  • Almond Milk

I had all ingredients in the house and I knew the broccoli and mushrooms needed to be eaten soon, therefore resulting in me coming up with the “No Crust Scrambled Quiche“.  Sounds good right?  It is trust me and very filling.


Heat EVOO in pan, add onions and mushrooms and let cook on low.  Steam OR even quicker, microwave your broccoli until just al dente.  *NOTE* The key to this recipe is timing, keeping the veggies cooking without getting soggy or too soft.  Add the broccoli to your pan with the mushrooms and onions, sprinkle with sea salt and ground pepper.  Turn up the heat and finish cooking all veggies together so they are pretty even texture wise.  Scramble your egg {I used four eggs as I shared this with my hubby}, using zero sugar almond milk {water is another option} but the almond milk makes them a bit fluffier.

I microwave my eggs for about two minutes just to get them started, then I added them to the pan with the veggies.  Fold everything together while adding your cheese.

Slice you avocado and place on the side or on top and season with tabasco sauce  or whatever your liking.  This dish can have other items added to it, like bell peppers, etc.  I just happen to use what I had.  But getting creative in the kitchen and shopping smart is the key to eating as healthy as possible.  It takes time and work, but so worth it once we make it a lifestyle and habit.

  2. I love this! I have omelets all the time with broccoli and haven’t made anything like this. I am a breakfast for dinner a lot of times so I would do this for dinner, my daughter LOVES broccoli so even they will eat this!

    • Okay I wish my kids “loved” broccoli…I have to bribe them to eat it…I would normally make a quiche {or two} and have for the week, but this was quicker and without the crust much healther 🙂 Thanks Melissa
