Roasted Butternut Squash and Beet Soup

I just happen to have a bag of beets in the fridge last week and really needed to do something with them.  I was in the mood for cooking on this day, so soup it would be.  The great thing about beet soup, I think it could taste great warm or chilled.

Ingredients

  • 3 Beets peeled, and cut into wedges}
  • 1 Butternut Squash
  • 1 Cup Steamed Cauliflower
  • Fresh Ginger
  • Kefir
  • Plain Greek Yogurt
  • Agave
  • EVOO
  • Kosher Salt
  • Ground Pepper

  • Peel and cut beets into cubes or quarters
  • Place beets in boiling water and boil until tender {yes I boiled the beats for this soup}.
  • Cut your butternut squash in half and poke a few holes in it with a knife or fork
  • Drizzle some agave on top {this just adds a bit of extra sweet}
  • Drizzle EVOO in baking dish and place the squash face down in the dish
  • Bake at 350 degrees for about 30-45 mins depending on your oven, but until the squash is tender {the skin will be able to just pull right off}
  • Steam your cauliflower
  • Remove your beets from water {SAVE THE WATER} and add them to your food processor

  • Peel your squash and cut into cubes and add to food processor
  • Add Steamed Cauliflower
  • Add 2 cups of the beet water
  • Add 1 Cup Kefir
  • Grate in fresh ginger {keep your ginger frozen, this makes it easier to grate}
  • Dash of Kosher Salt
  • Dash of Pepper

Process all ingredients together until smooth or desired consistency.  {If needed add more beet broth or Kefir}.

Top with plain greek yogurt and serve.

  6. Perfect timing! I just bought some beets to make juice with but have also been looking for beet recipes to add them into. Never thought about combining beets with butternut squash – yum! I’ve got a pumpkin lying around so will have to use that instead : ))
