Spinach and Strawberry Salad

It has been far too long since my last post and I have so much to share with you ….

So basically, now that I am “Home Alone“, I can get caught up and we can get back to chatting.  I am starting off with a new Summer Salad Recipe that my hubby and I have been eating a lot of.  This can be categorized as Paleo since everything in it is okay even the homemade dressing we came up with.

 Spinach and Strawberry Salad
Serves as many as you like

Ingredients …

Fresh Spinach Leaves
Strawberries
Cashews
Sunflower Seeds
Pumpkin Seeds
Dried Cranberries *{cranberries are Paleo, but be very careful with dried cranberries as they have added sugar} go for a brand that does NOT add sugar OR go in moderation if you really are a stickler with that.

Dressing …

EVOO
Balsamic Vinegar
Honey
Thyme
Dijon Mustard

This salad is so pretty and full of color and very filling.  Place all ingredients into a bowl and toss with dressing and enjoy

  6. I love salads! My fiance sometimes gives me grief for my love of rabbit food but I can’t help it, I’ve always loved fruits and veggies (except yellow squash). I really enjoy spinach fresh or cooked. If I cook it I take fresh spinach and cook it with a small amount of butter over the stove. Then I add a couple splashes of lemon juice, a teaspoon of minced garlic while it cooks, and then a couple shakes of kosher salt when I serve it up. So freaking yummy!
