Quick, Easy Breakfast Quesadilla

I don’t know what it is about fall and food, but I love having bigger and more pumped up breakfasts during this season, more so than summer.  This past weekend consisted of football, the world series {I live right here in Giant’s territory} and finally rain.  Breakfast meant making something yummy, quick, easy and hearty.  Hillshire Farms made for a great start to the breakfast quesadilla.

Ingredients

Eggs
Onion
Red Bell Pepper
Sharp Cheddar
Spicy Jack
Whole Wheat Tortilla
Kosher Salt
Ground Pepper
EVOO

Directions

Saute sausage and onion in EVOO.  Grill your red bell pepper {you can do this really quick on the stove right over the flame}.

 

Hillshire Farms Breakfast Quesadiila

Shred your cheese, cook your eggs, chop your bell pepper and add everything together and place in your folded tortilla.  Heat on the stove to melt cheese and serve.  This is awesome post run breakfast and full of protein.
