Easy Spicy Shrimp

I am always in the mood for a good spicy shrimp dinner and if I am not ordering take out, then I am making it at home.  Honestly, this way tastes much better and is very easy and quick {more affordable also}.

Spicy Shrimp

Ingredients

1 Pound Raw Shrimp {peeled and de-vained} OR you can do that yourself
3 Tablespoons Soy Sauce {low sodium}
1 1/2 Tablespoons Chili Garlic Sauce {this is HOT, so I start out with this amount and adjust if I want more}
2 Teaspoons Sesame Oil
2 Teaspoons Rice Wine OR you can substitute with a dry pale sherry
1/4 Teaspoon Stevia OR sugar {Stevia is much sweeter than sugar} read about Stevia before using}
EVOO
Fresh Garlic Cloves {this will vary depending on how much garlic you want}
1 Scallion Finely Chopped
1/2 Carrot Shredded or Julienned
Fresh Ginger {grated} OR 2 Teaspoons Ginger Powder
Rice or Potato Starch {Optional to thicken}
Rice {Optional}

 

Spicy Shrimp

Directions

Rinse and clean your shrimp.  Leave the tail on if you prefer.
Combine your soy sauce, chili garlic sauce, sesame oil, rice wine, fresh ginger and stevia in a bowl and set aside.
Drizzle your EVOO in pan and add your fresh garlic, heat quickly and then add your shrimp.  Cook until pink on both sides.
Add your soy sauce mixture and fold with the shrimp and garlic keeping to medium heat.
*Optional*  Add your rice or potato starch mixture to thicken your sauce.  I did this because it covered the shrimp better.
Serve warm either on top of rice or alone and top with your green scallions and carrots.

*NOTES* for this recipe.  Go easy with the chili sauce as you can add more.  Go easy with your sweetener if using Stevia, it is far more sweet than regular sugar.  You can always adjust the recipe to your taste.

This is a pretty basic recipe that can be made with many options and tweeks.
