Easy Veggie Frittata

Sunday, football and fall equals food.  A super easy, quick and healthy recipe for such a day would be the Frittata.  I am a fan of this dish and I love eating it right out of the oven warm or having later chilled from the fridge.  Either way, the Frittata is a great substitute for the quiche, since it deletes the crust.
*Some people will make a frittata on the stove sort of like an omelette.  I prefer to bake mine in the oven.

Sunday Frittata


5 Eggs
6 Mushrooms
1/2 Red Onion
1/2 Red Bell Pepper
1/2 cup Shredded Pepper Jack Cheese
1 cup black beans
1/2 cup fresh salsa
1 tsp Cumin
Kosher Salt {Dash}
Ground Pepper {To Taste}
1 Avocado
1/4 Almond Milk {Optional}


Beat eggs in a bowl with 1/4 cup of water OR almond milk.  Set aside.  Chop your mushrooms, bell pepper and onion and sautee quickly with black beans and salsa in  EVOO.  Sprinkle salt and pepper to taste, add cumin.  Place sauteed veggies in square or round baking dish and pour egg mixture over.  Top with shredded cheese and bake at 350 degrees for about 30 minutes.  Timing will vary according to oven.  Remove let sit to cool or serve right away warm.  Top with sliced avocado and or tomato.  Enjoy

Sunday Frittata

This can be a meal alone or great with some fresh fruit or salad on the side.  Adding the beans helps “hearty” it up a bit and make it filling.

  2. I’ve never baked a frittata before, but I’m thinking I’ll be making a change soon. I’d probably either add meat to the mixture, or like you said, pair it with a bowl of fruit.

    We actually eat a normal days worth of meals on Sunday. That’s only because 1) My husband works all day & 2) Since living in Kuwait, we’re 7 hours (now 8 since y’all turned clocks back… *Kuwait doesn’t change theirs*) ahead of y’all. We usually just finished up dinner & getting ready for the night/early morning of football to begin.
