Goat Cheese and Sundried Tomato Stuffed Chicken

The Napa Valley is the newest home for Grocery Outlet and last week I was able to attend the grand opening.  As a mom who believes in feeding her family the healthiest way possible, using fresh ingredients and sticking to a budget, the Grocery Outlet is a for sure place to find what I need.  I was pleasantly surprised to see familiar name brand products at such discounted prices.  I was very happy to see that Grocery Outlet has a NOSH program.  This is all about Natural, Organic, Specialty and Health items and food.  I can shop my healthy options for meals and for the house at great prices.

I found some Foster Farms split bone in chicken breasts and thought of a great dinner idea for the family.

Goat Cheese and Sun Dried Tomato Stuffed Chicken

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes
4 serving


  • 4 bone in, skin on chicken breasts
  • Kosher salt and fresh ground pepper to taste
  • 8 ounces fresh goat cheese
  • 1 cup sun dried tomato halves
  • 1 1/4 cup olive oil
  • 1/4 cup fresh basil leaves, {chiffonade}


Preheat oven to 350 degrees.  Lightly oil baking dish.
Season and oil chicken with salt and pepper to taste.  Cut each breast horizontally, but not through to the other side {create a pocket}
Lift top flap of chicken pocket and arrange cheese, basil and sun dried tomato.
Place chicken onto baking dish and bake until it is completely cooked through {make sure you check internal temperature 165 degrees} about 30 minutes
Serve and garnish with fresh basil
