Carrot Parsnip Soup

I happen to like Parsnips…I think they are so similar to the carrot, but with a tad of a bite to it.  This soup was great and another fav from Better Homes and Garden, only I had used too many carrots.  Depending on the size you get will make the soup thick or not.  As you can tell by my pics, we had really large carrots, so eight were too many. Ingredients 8 medium carrots, cut these into 1-inch pieces 2 medium parsnips, peeled and cut into 1-inch pieces 1 medium onion cut into thin wedges 1 tbl EVOO  (extra virgin olive oil) 3 14.5 – ounce cans chicken broth (low sodium peeps) 1 tsp smoked paprika 1 tsp lemon juice fresh ground black pepper Preheat the oven to 425 degrees. Fresh Pumpkin Ginger Soup

Thanks to my Better Homes and Gardens Soups…I was able to make this great pumpkin soup…With a few tweeks and revisions of our own, we added some fun to it..:)  The prep was easy and with grilled tuna and tomato on whole grain sour dough, it made for an amazing fall lunch. It’s Fall…Yay

  Okay finally it’s here….Fall! Pumpkins, piles of leaves. I love, love this time of year.  This is the time of year to have excuses to just hang out and get “cozy”, to be a bit lazy, to just curl up to a good movie, some popcorn, board games and eat.  However, we can get through the Fall season without going crazy over-board with all the food everywhere.  Clean eating and smart eating can be done around this season.  Portion control is going to play a huge factor on how we feel come January. List Of Favorite Childrens’ Books

In Every Tiny Grain of Sand I love this book because it has really good poems and great illustrations.  I like the words used in this book and I like that it has blessing and prayers.   Velma Gratch & The Way Cool Butterfly  This book has GREAT illustrations.  It is easy for kids to read.  It tells you some facts about butterflies.  It makes me giggle when I read it. Olive The Other Reindeer   My mom and dad purchased this book for my older brother when it was published. The authors   J. Otto Seibold and Vivian Walsh came to Sonoma to the local bookstore and had a reading and book signing.  So this book is super special because it was signed by the Authors.  I love the illustrations.  The thick pages.  The cute reindeer’s.  It always makes me wish it was Christmas when I read this book.
