Can We Talk BB Cream….Please?

Okay so I know this is not “fitness” related, however I have to go here.  For anyone who either knows me or has been following me for some time knows that I am the most simple and plain gal there is. Roasted Cauliflower Soup

Okay so who does NOT like roasted cauliflower and garlic?  I came across the recipe and that was it, I was in heaven.  In fact, I think we have a head of cauliflower in the fridge every week.  This is the season to be roasting garlic.  That’s another recipe coming soon 🙂 1 large head of cauliflower, cut into florets (this should be about 8 -10 cups) 1 large onion, sliced 2 cloves fresh garlic 2 tbls EVOO 2 14.5 – ounce cans chicken broth (low sodium) 1 cup water 1 bay leaf 1 tsp snipped (fresh thyme) OR 1/4 tsp dried thyme, crushed 1 cup half and half OR 2% milk (less fat) pinch of sea salt (optional) pinch of ground black pepper Pre-heat the oven to 400 degrees.  In your large roasting pan or baking pan combine the cauliflower, onion and garlic.  Drizzle with EVOO and gently toss to…  Read More…

Carrot Parsnip Soup

I happen to like Parsnips…I think they are so similar to the carrot, but with a tad of a bite to it.  This soup was great and another fav from Better Homes and Garden, only I had used too many carrots.  Depending on the size you get will make the soup thick or not.  As you can tell by my pics, we had really large carrots, so eight were too many. Ingredients 8 medium carrots, cut these into 1-inch pieces 2 medium parsnips, peeled and cut into 1-inch pieces 1 medium onion cut into thin wedges 1 tbl EVOO  (extra virgin olive oil) 3 14.5 – ounce cans chicken broth (low sodium peeps) 1 tsp smoked paprika 1 tsp lemon juice fresh ground black pepper Preheat the oven to 425 degrees. Fresh Pumpkin Ginger Soup

Thanks to my Better Homes and Gardens Soups…I was able to make this great pumpkin soup…With a few tweeks and revisions of our own, we added some fun to it..:)  The prep was easy and with grilled tuna and tomato on whole grain sour dough, it made for an amazing fall lunch. It’s Fall…Yay

  Okay finally it’s here….Fall! Pumpkins, piles of leaves. I love, love this time of year.  This is the time of year to have excuses to just hang out and get “cozy”, to be a bit lazy, to just curl up to a good movie, some popcorn, board games and eat.  However, we can get through the Fall season without going crazy over-board with all the food everywhere.  Clean eating and smart eating can be done around this season.  Portion control is going to play a huge factor on how we feel come January. My number one favorite all time comfort, cozy food is soup.  I don’t care if it is broth, thick, creamy, plain and boring, or full of veggies, beans, rice, noodles, chicken, or whatever else.  It is the perfect meal for a cold day.  The smell of cloves and cinnamon in the house, the mulled cider on…  Read More…
