Easy Spicy Shrimp

I am always in the mood for a good spicy shrimp dinner and if I am not ordering take out, then I am making it at home.  Honestly, this way tastes much better and is very easy and quick {more affordable also}. Avocado and Egg Muffin Cups

What goes great with Sunday morning and football … Brunch, that’s what.  The latest in breakfast options for us this past weekend, and most likely on the menu again, because these egg muffins were amazing! Ingredients 8 Eggs Avocado Turkey Sausage Onion Pepper Jack Cheese {optional mushroom, red bell pepper} Bacon Almond Milk {zero sugar} Muffin papers Kosher Salt Ground Pepper Directions Pre-heat oven to 350 degrees. Cut avocado into small cubes. Whip the eggs with a splash of Almond Milk and set aside. Cook and cut your turkey sausage into small pieces. Dice onion and grate the pepper jack cheese. Easy Veggie Frittata

Sunday, football and fall equals food.  A super easy, quick and healthy recipe for such a day would be the Frittata.  I am a fan of this dish and I love eating it right out of the oven warm or having later chilled from the fridge.  Either way, the Frittata is a great substitute for the quiche, since it deletes the crust. *Some people will make a frittata on the stove sort of like an omelette.  I prefer to bake mine in the oven. Quick, Easy Breakfast Quesadilla

I don’t know what it is about fall and food, but I love having bigger and more pumped up breakfasts during this season, more so than summer.  This past weekend consisted of football, the world series {I live right here in Giant’s territory} and finally rain.  Breakfast meant making something yummy, quick, easy and hearty.  Hillshire Farms made for a great start to the breakfast quesadilla. Cashew and Mandarin Orange Summer Salad

Strawberries are out now and who doesn’t love them?  These pretty little things go great with just about everything or just by themselves.  We love adding strawberries to our salads, just enough sweet and the perfect pretty color.  ♥ Strawberry Spinach Salad Serves 2 or more Prep time 20 mins Ingredients for salad Baby Spinach Fresh Strawberries Cutie Orange {segments} Red Onion Cashews Goat Cheese Ingredients for dressing Strawberries EVOO Dash of Sugar {optional} Apple Cider Vinegar Directions Cut berries and onion and add to bowl with fresh spinach leaves.  Add cutie orange segments and toss with cashews.  Sprinkle with goat cheese.  Add your dressing ingredients in a bowl and mix or blend {puree the strawberries}.  Drizzle over salad and serve.  You can make this dish more as many as you like or just for you.  Summer light meal that can go great with a nice glass of wine.  Enjoy…  Read More…

Blueberry and Watermelon Smoothie

Watermelon is in this house the entire season, we can’t get enough.  When I was a kid, my grandmother used to cut, cube and remove the seeds from our watermelon and place it in a bowl for us to have as a snack.  This is now the way I make and prepare watermelon for my kids.  This latest smoothie recipe has watermelon in it and the melon gives is just enough of a sweetness {almost sugar like} but without added sugar.
