I wish I could take credit for this, but my hubby is the master mind behind this one.  It must have been after spending the day out in the Napa Valley and having lunch.  We  were talking about good restaurants we have been to and some of our favorite “comfort, cheat” foods we have every so often.  Then we both said “truffle fries at EDK“, our eyes glazed over and grins on our faces. So we are in full swing of “pumpkin” season.  It’s fall, the flavors, the colors, the lattes, the recipes, the warm fall clothing.  It is all about the cozy.   When using pumpkin in any of my recipes, I love using a cooking pumpkin instead of canned pumpkin whenever I can.  Sure it is more work, however I really enjoy prepping and cooking in the kitchen and if heating the oven to bake or roast veggies of any kind is top of my “fave” list.  Especially this time of year. Iced Coffee Latte with PB2

I am one of those people who CAN sleep on coffee.  Yes, forget the “decaf”, load me up!  I have finally gotten myself to drink my morning coffee without sugar, just plain {zero sugar, unsweetened} Almond Milk.  However, when it comes to the afternoon and I am feeling a tad groggy, I know I need to whip something up.  But I want to keep it somewhat as low sugar so possible {and cals}. Easy Chicken Stir Fry

I have been craving stir fry for weeks {no not from some take-out, to-go} but real, healthy and fresh, clean stir fry.  My own!  Here it is…. Caprese Salad In The Wine Country

Basil Pesto

Everyone most everyone either LOVES pesto and/or makes it homemade.  Right?  Well we make pesto all the time in our house and use if for so many foods, here is our “basic” recipe. Ingredients Basil {fresh} Garlic {fresh} you can purchase garlic already skinned and ready for use and in EVOO from places like Whole Foods in a container Parm Cheese {fresh grated is best, but if you must use pre-grated then do so} EVOO Sea Salt Add everything in the blender and pulse. Sweet Potato Protein Torte

I was surprised and excited to be contacted by ViSalus one day asking me if I would be interested in creating a recipe or two using their Vi Shape Nutritional Shake Mix.  I was sent the Balance Kit and gave it a try.  I right away created a smoothie using the flavor mix-ins one time and then adding my own fruit and used my zero sugar almond milk. Parsnip Chips

Grill time is upon us, and I am so excited.  This means less mess in the kitchen right? WRONG!  Prepping meals at home means work and mess in the kitchen, but it’s so worth it. We had parsnips in the house again and instead of making soup, I figured let’s have chips with our turkey burgers.  So here you go….. Parsnip Chips and Veggie Turkey Burgers Parsnips EVOO Fresh Rosemary Garlic powder OR fresh garlic cloves Sea Salt Turkey Burgers Whole Foods fresh prepared Turkey/Veggie burger Red Onions Gorgonzola Bosque Pear Thinly slice your parsnip and add EVOO and seasons together in a bowl, blending together.  Place the {chips} on a baking sheet or in a baking dish and bake at 350 degrees for about 45 mins. {YES, these take a while}   *NOTE* If you have a mandoline, you can get thinner slices. Parsnip and Leek Soup

If you are a lover of Parsnips and/or Leeks, then I have the simplest and seriously most amazing soup recipe for you. Ingredients Parsnips Leeks Chicken Broth {low sodium} Bay Leaf Sea Salt {optional} Fresh Ground Pepper Crostini {optional} Peel and cut the leeks from the base going forward until you get to the “leafy” part {you don’t want those pieces} Cut into circles, soak and rinse thoroughly as they tend to have dirt and sandy grit Saute the parsnips and leeks in EVOO and season to taste {add a fresh bay leaf if you can} until the leeks are tender Add your chicken broth and bring to a boil then back to a simmer, continue to simmer until the parsnips are “fork tender” Puree {if using a blender, which I did} pour 3/4 full and keep the circle top off of the blender {as the heat can create pressure and…  Read More…
