Chocolate Banana Bites

So with Spring in full mode and the end of the school year approaching quickly {May 30th for us}, I have been brainstorming and searching around for some super quick, healthy and fun snacks and treat for the kids {okay, who I am I kidding, myself also}.  I happen to stumble upon this great banana treat from Pop Sugar and thought two things…..WOW, those look so pretty and how cool what a great idea.  Well we have bananas in the house ALL the time and are adding them to smoothies, packing them in the backpack for a hike, just grabbing them for a quick snack, so why not try these cute creations? Sugar Free Iced Mocha

How many times do we start to “crash” in the afternoon? Hellllooooo, always!  I don’t want to reach for something that is full of calories and sugar and I do love my coffee {I can actually drink it late in the day and still sleep}.  Well my body was feeling it yesterday so I took a look around the kitchen and wondered what could I make to help me through the day, besides just a cup of coffee. Gorgonzola Risotto

Can we talk Risotto? Seriously, no joke one of my most FAV foods to get creative with.  This stuff is ohhhh so good, but ohhhhhh so bad on the waistline if I am not watching it.  I we have {my hubby and I} created so many different risotto recipes in the kitchen.  They are never-ending because you can do just about anything with it. What did we have in the house this time?  Plenty of cool choices because we are always shopping smart and “fresh” so we can have ingredients handy at most any given moment. Greek Yogurt Parfait Made Easy

You don’t have time to create an entire Parfait?  This is an super easy and quick recipe close enough to it. Plain Greek Yogurt Fresh Strawberries {any berries can do, I happen to have these here} PB2 {Powdered Peanut Butter} Chia Seeds Cinnamon Banana I only use plain Greek yogurt in the house {unless it is for the kids,they can use the extra fat and calories} I don’t want the high sugar count for myself so I check labels and plain Greek is about the lowest you can find.  This had 11 grams per 8 oz serving {I used less than that} and my PB2 has 1 gram sugar per 2 tblspoons. Seriously, this is so easy.

Orange Cleanse

Okay so everyone has a “cleanse” today OR everyone is drinking smoothies, veggie juices, etc. I am a huge fan of all this stuff and I love creating smoothies in the kitchen. Most of the time they are so “out there” that my hubby rolls his eyes and makes some sort of grunt sound when I want to share them with him. Well, today was another “create” day. Heirloom Tomato Bruschetta

What a great family weekend we had.  With the kids out of school and the hubby home, we wanted to end the long holiday weekend with a simple meal for the two of us to enjoy after feeding the kids dinner. We do this often, as both my hubby and I truly believe in “our time”.  Family is the number one important thing to us and our kids come first, however making time each night for us is just as important and most likely the key to our successful 15 years of marriage. 🙂 We can’t always head out for “date night” but we can keep “date night” at home and that is very budget friendly. Baked French Fries
