Basil Pesto

Everyone most everyone either LOVES pesto and/or makes it homemade.  Right?  Well we make pesto all the time in our house and use if for so many foods, here is our “basic” recipe. Ingredients Basil {fresh} Garlic {fresh} you can purchase garlic already skinned and ready for use and in EVOO from places like Whole Foods in a container Parm Cheese {fresh grated is best, but if you must use pre-grated then do so} EVOO Sea Salt Add everything in the blender and pulse. Gorgonzola Risotto

Can we talk Risotto? Seriously, no joke one of my most FAV foods to get creative with.  This stuff is ohhhh so good, but ohhhhhh so bad on the waistline if I am not watching it.  I we have {my hubby and I} created so many different risotto recipes in the kitchen.  They are never-ending because you can do just about anything with it. What did we have in the house this time?  Plenty of cool choices because we are always shopping smart and “fresh” so we can have ingredients handy at most any given moment.
