Peanut Butter Protein Banana Waffles

Quick, Easy Breakfast Quesadilla

I don’t know what it is about fall and food, but I love having bigger and more pumped up breakfasts during this season, more so than summer.  This past weekend consisted of football, the world series {I live right here in Giant’s territory} and finally rain.  Breakfast meant making something yummy, quick, easy and hearty.  Hillshire Farms made for a great start to the breakfast quesadilla. I think I have officially spoiled my children {and possibly husband}.  Do I get up every morning and make breakfast and pack lunches?  I do.  Do I mind?  I don’t.  Is it just part of being a mom.  After all, isn’t it listed in the mommy manual as just one of the many jobs we have? Vega One Change Jump Start

We are already half way through January of this new year and almost everyone is off and running towards their New Year’s resolutions and goals.  Gym memberships are up, we are out buying new workout wear, shoes, gear, equipment.  We are taking new classes, trying something new, training for something.  This is all great, are we going to keep at it?  Are we looking for a change?  Are we getting on that roller coaster called “dieting”?  Let’s not, let’s stay focused and get on track and be smart.  It is still early enough to do this and not get discouraged. Broccoli Egg Scramble

We eat quiche right?  Normally quiche has broccoli in it {well mine does}.  Today’s recipe is a super quick and very healthy breakfast, post workout and without having to bake a quiche or use a crust. INGREDIENTS Fresh broccoli {if you have frozen it will do} Mushrooms Yellow Onion Eggs Cheese {I used an assorted mix} Sea Salt Ground Pepper Avocado EVOO Almond Milk I had all ingredients in the house and I knew the broccoli and mushrooms needed to be eaten soon, therefore resulting in me coming up with the “No Crust Scrambled Quiche“.  Sounds good right?  It is trust me and very filling. Greek Yogurt Parfait Made Easy

You don’t have time to create an entire Parfait?  This is an super easy and quick recipe close enough to it. Plain Greek Yogurt Fresh Strawberries {any berries can do, I happen to have these here} PB2 {Powdered Peanut Butter} Chia Seeds Cinnamon Banana I only use plain Greek yogurt in the house {unless it is for the kids,they can use the extra fat and calories} I don’t want the high sugar count for myself so I check labels and plain Greek is about the lowest you can find.  This had 11 grams per 8 oz serving {I used less than that} and my PB2 has 1 gram sugar per 2 tblspoons. Seriously, this is so easy.

Am I Up At 4 a.m. cooking? Yes I AM!

Okay so yesterday was opening day for Little League season and we had an early game.  Originally we were scheduled to start at 9:00 a.m. but as scheduling goes with little league, chances are things always change. In our case it did and we had a day’s notice that our game had been moved down to 8:00 a.m. {which means in baseball terms} we were to be meeting at 7:00 a.m. in order to wake up, warm up and get our new hats and jerseys. Yep, last minute that’s how it goes in this business. I am not the team mom this year as I have stepped back and let someone else take this task on.  Sure I would have done it again if we needed the position filled.
