Roasted Sweet Potato with Lime and Honey

I am always looking for a new way to prepare my sweet potatoes.  After sitting at my kitchen table for some time and staring at the bowl of them, it came to me…Lime, why not?   I love the combination of the two together. INGREDIENTS Fresh lime Sweet Potatoes Honey Cinnamon Ground Cloves EVOO DIRECTIONS Pre-heat oven to 350 degrees.  Rinse and cut your sweet potato into halves or quarters.  Lay them in a baking dish and add EVOO, make sure to turn them over and get both sides in the oil.  Squeeze your lime juice onto the potato.  Sprinkle a mixture of ground cloves and cinnamon to the tops and drizzle some honey.  Bake for about 45 mins OR until soft to your liking Serve warm and drizzle a bit more honey on top.  This made great leftover for lunch the next day after my workout.  Enjoy ♥ *Do you…  Read More…

Roasted Pumpkin and Sage Risotto Cakes

So we are in full swing of “pumpkin” season.  It’s fall, the flavors, the colors, the lattes, the recipes, the warm fall clothing.  It is all about the cozy.   When using pumpkin in any of my recipes, I love using a cooking pumpkin instead of canned pumpkin whenever I can.  Sure it is more work, however I really enjoy prepping and cooking in the kitchen and if heating the oven to bake or roast veggies of any kind is top of my “fave” list.  Especially this time of year. Gorgonzola Risotto

Can we talk Risotto? Seriously, no joke one of my most FAV foods to get creative with.  This stuff is ohhhh so good, but ohhhhhh so bad on the waistline if I am not watching it.  I we have {my hubby and I} created so many different risotto recipes in the kitchen.  They are never-ending because you can do just about anything with it.
