The Ultimate Coffee Date October

Happy Fall finally and good Saturday morning to all of you.  We are here this morning to get together for our monthly coffee chat, or maybe a pumpkin spice latte chat.  Whatever your choice, welcome.  Be sure to head on over and visit my co-hosts Deborah and Coco. ♥ If we were having coffee, I would tell you that I have three {3} half marathons in the next few weeks.  WHAT?  Yes, yes I do and now that I am reading this and saying it out loud in my head, I am thinking that I am totally off my rocker.  How did this happen?  When did I think I was going to take on so much running in such a short amount of time?  I’m not ready for all these, am I?  I have been really stepping up the Pure Barre classes, so I know I am feeling core strong,…  Read More…

Sharing A Few Of My Favorite Things … Fall

Most of us are getting ready for the holidays right about now, and I assume we are making “wish” lists or shopping already, either for ourselves or for others.  This is the perfect time to go ahead and share just a few of my current favorites.  I am linking up with Kat over at Mama’s Losin It  for this weeks writing prompt … Some Of My Most Recent Favorite Things – Fall Edition. ♥ I love to cozy up this time of year and some of the latest pieces I enjoy are from Threads For Thought.  I love this company and what they stand for.  If I am not ordering on line, I can find them in my local Whole Foods Market and I am always picking up a piece for my collection here and there. Easy Veggie Frittata

Sunday, football and fall equals food.  A super easy, quick and healthy recipe for such a day would be the Frittata.  I am a fan of this dish and I love eating it right out of the oven warm or having later chilled from the fridge.  Either way, the Frittata is a great substitute for the quiche, since it deletes the crust. *Some people will make a frittata on the stove sort of like an omelette.  I prefer to bake mine in the oven. Ingredients 5 Eggs 6 Mushrooms 1/2 Red Onion 1/2 Red Bell Pepper 1/2 cup Shredded Pepper Jack Cheese 1 cup black beans 1/2 cup fresh salsa 1 tsp Cumin Kosher Salt {Dash} Ground Pepper {To Taste} 1 Avocado EVOO 1/4 Almond Milk {Optional} Directions Beat eggs in a bowl with 1/4 cup of water OR almond milk.  Set aside.  Chop your mushrooms, bell pepper and onion…  Read More…

Hello November

I loved waking this morning to the cool air coming through the window.  No rain today, but a fall chill with just the right amount of sun {California weather}.  It’s Sunday and the first weekend of November is here.  My favorite time of year is now starting.  We are done with October, Halloween is over.  In my mind, this is the start of Fall.  The kids are starting to sleep in a bit longer on the weekends, even the dog stays snuggled up.  I am taking in the quiet while lying in bed, because I know that once my feet hit the floor, it will be a very busy morning … I have plans and they include work and a to do list with the hubby. I don’t know if it is the time of year or what,  but moving a bit slower and taking more time to get things…  Read More…

Roasted Butternut Squash and Carrot Soup

Fall is here … Finally!  Okay I am in California and we have been having some extremely hot weather, but we have had few days of chilly cold and some sprinkles.  With that said, I was so excited to head into the kitchen yesterday afternoon and whip up some soup.  I just happen to have a butternut squash sitting around and plenty of ingredients to make some, so I decided to do this … Roasted Butternut Squash and Carrot Soup Ingredients 1 Butternut Squash 2 -3 Carrots 3 tbsp Olive Oil {I like Extra Virgin} 2 tbsp Cinnamom 2 tbsp Nutmeg 1 tbsp Fresh Grated Ginger {you can substitute for powdered ginger} Dash of Kosher Salt Dash of Ground Pepper 3 Cups of Vegetable Broth {low sodium} 1 Cup Coconut Milk Plain Greek Yogurt *Note* Keep your ginger in the freezer, it will last longer and be easier to grate…  Read More…

Fall and My Football…

Fall and Football!  Yep, that is where we are going today.  Football.  I can’t get enough of it.  Now my hubby is a huge fan of college football and I do watch and pay attention {only to see who I need to watch come time for the NFL draft}, I have to stay in the loop for my fantasy league picks and I am a Cal Berkley fan.  But college is NOT what I am talking about, nope, I am talking about THE BIG BOYS, the NFL. I really can’t recall why I have become such a hardcore fan, but I remember back in the 80’s watching and cheering on the San Francisco 49er’s, you know when they were a “great team”.  Montana, Clark, Rice, Cross {you get the idea}.  Time and years had passed and this gal was just not paying much attention until about 12 seasons ago.  Watching…  Read More…

Harvest Is Here and It Smells Wonderful…

Fall is in the air and this means so many things to us.  Living here in the Wine Country it definitely means that “harvest” is coming and the grapes and vines are amazing and beautiful.  The colors, the smells, the celebrations that happen all over the Napa/Sonoma county in the next month are something to be seen and experienced.  The ever-popular Valley of the Moon Vintage Festival is just one of many events to check out. Today’s walk was just blocks from my home.  The Sebastiani vineyards.  I am so lucky and blessed to have some most beautiful areas for running or walking.  Whether the sun is shining or there is a drizzle in the air, I love living the Sonoma life. *Have you visited Sonoma? Have you been to the Napa Valley? Do you have a favorite varietal/wine?
