Easy Veggie Frittata

Sunday, football and fall equals food.  A super easy, quick and healthy recipe for such a day would be the Frittata.  I am a fan of this dish and I love eating it right out of the oven warm or having later chilled from the fridge.  Either way, the Frittata is a great substitute for the quiche, since it deletes the crust. *Some people will make a frittata on the stove sort of like an omelette.  I prefer to bake mine in the oven.
