Easy Spicy Shrimp

I am always in the mood for a good spicy shrimp dinner and if I am not ordering take out, then I am making it at home.  Honestly, this way tastes much better and is very easy and quick {more affordable also}. Roasted Pumpkin and Sage Risotto Cakes

So we are in full swing of “pumpkin” season.  It’s fall, the flavors, the colors, the lattes, the recipes, the warm fall clothing.  It is all about the cozy.   When using pumpkin in any of my recipes, I love using a cooking pumpkin instead of canned pumpkin whenever I can.  Sure it is more work, however I really enjoy prepping and cooking in the kitchen and if heating the oven to bake or roast veggies of any kind is top of my “fave” list.  Especially this time of year. Creamy Roasted Tomato and Carrot Soup

It is always time for soup, no matter what the weather is.  I don’t know about you, but the moment pre-season football starts it is the time I go into  “Fall” mode and that means soup, comfort {healthy way} and getting cozy.  The days are still warm but with a light cool down early evening I don’t mind standing over the stove while creating my pot of comfort. Gorgonzola Risotto

Can we talk Risotto? Seriously, no joke one of my most FAV foods to get creative with.  This stuff is ohhhh so good, but ohhhhhh so bad on the waistline if I am not watching it.  I we have {my hubby and I} created so many different risotto recipes in the kitchen.  They are never-ending because you can do just about anything with it. What did we have in the house this time?  Plenty of cool choices because we are always shopping smart and “fresh” so we can have ingredients handy at most any given moment. Roasted Cauliflower Soup

Okay so who does NOT like roasted cauliflower and garlic?  I came across the recipe and that was it, I was in heaven.  In fact, I think we have a head of cauliflower in the fridge every week.  This is the season to be roasting garlic.  That’s another recipe coming soon 🙂 1 large head of cauliflower, cut into florets (this should be about 8 -10 cups) 1 large onion, sliced 2 cloves fresh garlic 2 tbls EVOO 2 14.5 – ounce cans chicken broth (low sodium) 1 cup water 1 bay leaf 1 tsp snipped (fresh thyme) OR 1/4 tsp dried thyme, crushed 1 cup half and half OR 2% milk (less fat) pinch of sea salt (optional) pinch of ground black pepper Pre-heat the oven to 400 degrees.  In your large roasting pan or baking pan combine the cauliflower, onion and garlic.  Drizzle with EVOO and gently toss to…  Read More…

Fresh Pumpkin Ginger Soup

Thanks to my Better Homes and Gardens Soups…I was able to make this great pumpkin soup…With a few tweeks and revisions of our own, we added some fun to it..:)  The prep was easy and with grilled tuna and tomato on whole grain sour dough, it made for an amazing fall lunch.
