Peanut Butter Protein Banana Waffles

Baked Spring Rolls

It has been far too long since I have spent some time creating something in the kitchen to share here with you.  The last few weeks I have been on a HUGE veggie diet eating binge, I just can’t get enough of them lately.  The latest craving as of current is the bean sprout.  I love them.  I was in the market with the hubby last week and a bam out of no where, I shouted across the produce aisle “spring rolls”!  “I want some veggie spring rolls, let’s make them”. Easy Spicy Shrimp

I am always in the mood for a good spicy shrimp dinner and if I am not ordering take out, then I am making it at home.  Honestly, this way tastes much better and is very easy and quick {more affordable also}. Easy Veggie Frittata

Sunday, football and fall equals food.  A super easy, quick and healthy recipe for such a day would be the Frittata.  I am a fan of this dish and I love eating it right out of the oven warm or having later chilled from the fridge.  Either way, the Frittata is a great substitute for the quiche, since it deletes the crust. *Some people will make a frittata on the stove sort of like an omelette.  I prefer to bake mine in the oven. Cashew and Mandarin Orange Summer Salad

Strawberries are out now and who doesn’t love them?  These pretty little things go great with just about everything or just by themselves.  We love adding strawberries to our salads, just enough sweet and the perfect pretty color.  ♥ Strawberry Spinach Salad Serves 2 or more Prep time 20 mins Ingredients for salad Baby Spinach Fresh Strawberries Cutie Orange {segments} Red Onion Cashews Goat Cheese Ingredients for dressing Strawberries EVOO Dash of Sugar {optional} Apple Cider Vinegar Directions Cut berries and onion and add to bowl with fresh spinach leaves.  Add cutie orange segments and toss with cashews.  Sprinkle with goat cheese.  Add your dressing ingredients in a bowl and mix or blend {puree the strawberries}.  Drizzle over salad and serve.  You can make this dish more as many as you like or just for you.  Summer light meal that can go great with a nice glass of wine.  Enjoy…  Read More…

Pomegranate Waldorf Salad

Another left over roasted chicken in the fridge {yes we eat that much chicken}.  What to do with this one?  Well instead of soup, why not a salad?  Better yet, it is holiday season and if I go back in memory to my childhood, I will recall my grandmothers {both named Betty} always making Waldorf salads and as a kid, I actually liked them.  Today’s recipe is just that…the Waldorf with a bit of a twist.
