Wine Country Salad

It’s always a great time for a spinach salad and when it is your main meal for a summer night’s dinner, adding some healthy extras to the mix makes it filling and satisfying.  Our latest addition to our salad menu … Wine Country Salad Ingredients Fresh spinach leaves Sweet Potato Feta Cheese Red Onion Bacon Hard Boiled Egg Filet Mignon Homemade vinaigrette *This recipe used Sonoma Harvest D’ Anjou Pear White Balsamic Vinegar Directions Rinse spinach and pat dry.  Cook bacon and let sit to cool then break up into pieces.  Cut sweet potato into thin slices and grill.  Saute mushrooms and let sit.  Once all ingredients are ready, place into large bowl and toss.  *Optional* Slice and grill filet mignon and add to salad. Cashew and Mandarin Orange Summer Salad

Strawberries are out now and who doesn’t love them?  These pretty little things go great with just about everything or just by themselves.  We love adding strawberries to our salads, just enough sweet and the perfect pretty color.  ♥ Strawberry Spinach Salad Serves 2 or more Prep time 20 mins Ingredients for salad Baby Spinach Fresh Strawberries Cutie Orange {segments} Red Onion Cashews Goat Cheese Ingredients for dressing Strawberries EVOO Dash of Sugar {optional} Apple Cider Vinegar Directions Cut berries and onion and add to bowl with fresh spinach leaves.  Add cutie orange segments and toss with cashews.  Sprinkle with goat cheese.  Add your dressing ingredients in a bowl and mix or blend {puree the strawberries}.  Drizzle over salad and serve.  You can make this dish more as many as you like or just for you.  Summer light meal that can go great with a nice glass of wine.  Enjoy…  Read More…

Pomegranate Waldorf Salad

Another left over roasted chicken in the fridge {yes we eat that much chicken}.  What to do with this one?  Well instead of soup, why not a salad?  Better yet, it is holiday season and if I go back in memory to my childhood, I will recall my grandmothers {both named Betty} always making Waldorf salads and as a kid, I actually liked them.  Today’s recipe is just that…the Waldorf with a bit of a twist. INGREDIENTS Roasted chicken Apples Pear Celery Greek Yogurt {Plain} Sea Salt Ground Pepper Pomegranate Fresh Lime {optional} Simply remove the extra chicken from your left over carcass OR use chicken breast.  Shred the chicken, chop your apple, pear and celery and add all together in a bowl.  Spoon in your greek yogurt {this is in place of mayonnaise} add a dash of sea salt and ground pepper.  Mix and fold all ingredients together.  Cut…  Read More…
