Pet Adoption and The Volunteer Job

How is summer going everyone?  We are into the second week of July and with the 4th behind us and the Tahoe trip  {post to come} in the past, I am finding that the days are filled with swimming at the country club pool or grandma’s house.  If that is not enough to keep the kids busy, then I am at a loss.  I am actually looking forward to some quiet time and just doing nothing for a few days, but when it is too quiet the kids get restless.  Noah has football workouts and camp three days each week until season starts, so that helps.  Miss Faith is busy shopping on-line for anything because, well she is a girl {a 13 year old girl}, she gets bored and she apparently thinks that we have a money tree planted in the back yard. Embracing Summer Vacation

I know we have been out of school for about two weeks, but it took this long to feel that we are officially into summer.  The confirmation from the hotel came through my email to confirm our reservation,  I then realized we REALLY were into summer AND we are going away!  So happy to be looking forward to something new, because it is not always possible or easy to get away during summer break.  We are more a “stay cation” type of family. Spinach and Strawberry Salad

Cashew and Mandarin Orange Summer Salad

Strawberries are out now and who doesn’t love them?  These pretty little things go great with just about everything or just by themselves.  We love adding strawberries to our salads, just enough sweet and the perfect pretty color.  ♥ Strawberry Spinach Salad Serves 2 or more Prep time 20 mins Ingredients for salad Baby Spinach Fresh Strawberries Cutie Orange {segments} Red Onion Cashews Goat Cheese Ingredients for dressing Strawberries EVOO Dash of Sugar {optional} Apple Cider Vinegar Directions Cut berries and onion and add to bowl with fresh spinach leaves.  Add cutie orange segments and toss with cashews.  Sprinkle with goat cheese.  Add your dressing ingredients in a bowl and mix or blend {puree the strawberries}.  Drizzle over salad and serve.  You can make this dish more as many as you like or just for you.  Summer light meal that can go great with a nice glass of wine.  Enjoy…  Read More…

Lime Cilantro Grilled Chicken Tacos

Another grilling recipe for this summer.  We love to use the grill as much as possible during summer.  We can pretty much do every meal right outside and keep it healthy and light.  ♥ Lime Cilantro Grilled Chicken Tacos Ingredients … Chicken breasts Cilantro Green Onion Tomato Yellow Bell Pepper Red Bell Pepper Yellow Onion Fresh Lime Cilantro Parmesan Cheese Freshly Grated Cheese White Corn Tortillas Garlic EVOO Avocado Pesto Chicken … Cilantro Fresh Garlic Parmesan Cheese EVOO Add cilantro, fresh garlic, parmesan cheese and EVOO into blender and blend. Blueberry and Watermelon Smoothie

Watermelon is in this house the entire season, we can’t get enough.  When I was a kid, my grandmother used to cut, cube and remove the seeds from our watermelon and place it in a bowl for us to have as a snack.  This is now the way I make and prepare watermelon for my kids.  This latest smoothie recipe has watermelon in it and the melon gives is just enough of a sweetness {almost sugar like} but without added sugar.
