Avocado and Egg Muffin Cups

What goes great with Sunday morning and football … Brunch, that’s what.  The latest in breakfast options for us this past weekend, and most likely on the menu again, because these egg muffins were amazing! Ingredients 8 Eggs Avocado Turkey Sausage Onion Pepper Jack Cheese {optional mushroom, red bell pepper} Bacon Almond Milk {zero sugar} Muffin papers Kosher Salt Ground Pepper Directions Pre-heat oven to 350 degrees. Cut avocado into small cubes. Whip the eggs with a splash of Almond Milk and set aside. Cook and cut your turkey sausage into small pieces. Dice onion and grate the pepper jack cheese. Easy Veggie Frittata

Sunday, football and fall equals food.  A super easy, quick and healthy recipe for such a day would be the Frittata.  I am a fan of this dish and I love eating it right out of the oven warm or having later chilled from the fridge.  Either way, the Frittata is a great substitute for the quiche, since it deletes the crust. *Some people will make a frittata on the stove sort of like an omelette.  I prefer to bake mine in the oven. It’s Sunday..Can We Start Over?

I can’t remember the last time we the kids slept in on a weekend, or I mean past 7:00 a.m.   But today the house seemed to be still and quiet until just after 8:00 a.m. and as I opened my eyes this morning and looked at the clock on the night stand, I let out a sigh of happiness. You know that sigh of pure relaxation, of thinking “oh how peaceful”, “how wonderful that no one is bickering”, “no one is asking for breakfast”, “the dog has not even moved to go out”.  You have time to just lay in bed and breathe in the scent of the freshly-laundered sheets {I never get to enjoy that} or you think “wow I can start the coffee and bring a cup back to bed”  type of morning.
