Butternut Squash Lasagna

What to do with the Thanksgiving leftovers?  Well, we make turkey and cranberry sandwiches, or turkey soup.  Or maybe something in the slow cooker.  A few days after Thanksgiving had me wanting something different.  I was all “turkied” out and wanted some comfort food that did not include mashed potatoes.  I had a great butternut squash and sweet potato bowl in the fridge and that would make for a great Winter Lasagna.  Using the squash and potato mixture together in the lasagna would help make it hearty since I had no extra veggies sitting around.  Super easy and quick, no hassle and great for the rest of the weekend.  *{No homemade sauce from this mom, so from the jar works just fine}. Avocado and Egg Muffin Cups

What goes great with Sunday morning and football … Brunch, that’s what.  The latest in breakfast options for us this past weekend, and most likely on the menu again, because these egg muffins were amazing! Ingredients 8 Eggs Avocado Turkey Sausage Onion Pepper Jack Cheese {optional mushroom, red bell pepper} Bacon Almond Milk {zero sugar} Muffin papers Kosher Salt Ground Pepper Directions Pre-heat oven to 350 degrees. Cut avocado into small cubes. Whip the eggs with a splash of Almond Milk and set aside. Cook and cut your turkey sausage into small pieces. Dice onion and grate the pepper jack cheese. Roasted Sweet Potato with Lime and Honey

I am always looking for a new way to prepare my sweet potatoes.  After sitting at my kitchen table for some time and staring at the bowl of them, it came to me…Lime, why not?   I love the combination of the two together. INGREDIENTS Fresh lime Sweet Potatoes Honey Cinnamon Ground Cloves EVOO DIRECTIONS Pre-heat oven to 350 degrees.  Rinse and cut your sweet potato into halves or quarters.  Lay them in a baking dish and add EVOO, make sure to turn them over and get both sides in the oil.  Squeeze your lime juice onto the potato.  Sprinkle a mixture of ground cloves and cinnamon to the tops and drizzle some honey.  Bake for about 45 mins OR until soft to your liking Serve warm and drizzle a bit more honey on top.  This made great leftover for lunch the next day after my workout.  Enjoy ♥ *Do you…  Read More…

Sweet Potato Protein Torte
